Since the psalm is part of the Liturgy of the Word; and the Psalm is proclaimed as a sung, many times verbatim rendering of this part of Holy Scripture; 6/8 lends itself to its sung proclamation. It's because of the accents on 1 & 4 if you think about it. If you think of any sentence, you can probably make it work in 6/8 by using the natural accents of the syllables in the given sentence, and melismas (making one syllable extend over more than one note).
