The musical concept of the "Mass of Anointing" is a simple one: opening phrases suggesting God sending his blessings down to us, with responding phrases suggesting our being uplifted, or our reaching up toward God to receive his gifts. The Mass includes standard prayers and responses, with additional parts that can be sung for the Rite of the Anointing of the Sick.

I have harmonized much of the vocal/choral part, but you may find that unison singing works as well, or perhaps even better, for your choirs, congregations, and communities.
